Shelby studied at the New England Culinary Institute where she was awarded the Taste of New England Scholarship. She interned at the James Beard award winning Oleana restaurant. After leaving Culinary School she continued to work in fine dining restaurants in the Boston area. After four years she moved to New York City and worked at Restaurant Daniel; the renowned restaurant of Chef Daniel Boulud. During her time there, the restaurant became one of the few eateries in Manhattan to earn a three-star Michelin rating. She later moved to San Francisco where she worked at Outerlands Café, il Cane Rosso, and 2 Michelin star Coi Restaurant, before returning home to the East Coast. For the past five years Shelby has been Co-Executive Chef, alongside her husband, as well as Pastry Chef at Relais and Chateaux Natalie’s Restaurant in the Camden Harbour Inn.
